Happy Tuesday y’all! Want to know something funny? I cannot stand it when people who aren’t from the South use y’all. It drives me bananas. It’s like when people pronounce French/Spanish/German, etc words with an accent. Just say it like an American, you sound so dumb trying to use the correct accent. Just me?
Anyway, I’m a day late on my Monday post, yesterday was a doozy! So how was everyone’s weekend? Mine was pretty chill. I spent a lot of time in the kitchen. Every time I prep food, I’m amazed at how much I can get done in just a little amount of time. I crushed it on Saturday.
As promised, here is my SUPER easy recipe for Sesame Ahi & Coconut Rice.
- 1 lb sushi grade Ahi – I get all my fish at Sunh Fish
- Sesame Seeds
- Sea Salt
- 1 cup white rice – I like to use Lundberg Sushi Rice
- 1 Tbsp olive oil
- 1.5 cup canned coconut milk
- 2 Tbsp coconut oil
Cook the rice. Add the olive oil to the pot and then add in the rice and coconut milk. Stir and bring to a full boil. Lower to a simmer, cover and cook for 20 minutes. Take off the heat and then let steam with the lid on for a few minutes. Fluff and serve! It is AMAZING. Trust me.
Sear the Ahi. Sprinkle each side of the Ahi with sea salt, and then with the sesame seeds. Push the seeds lightly down onto the fish with your fingertips so it sticks on so you can seed up the other side and the sides of the fish.
Use a heavy bottomed pan and add the coconut oil. Let it get hot! Add the Ahi and sear for about a minute and 15 seconds on the first side, flip, and then sear for about 35-40 on the second side (I do less on the second side because the pan keeps getting hotter!). Pull off the heat, slice and serve!
This is seriously such a big hit every time I make it. And it is ridiculously easy. If you make it, tag me and let me know!
