Hello hello hello! How is everyone doing? I am doing great, thanks for asking! You’ve likely noticed (or not), that this little blog has been on a bit of a hiatus for the past few months. Time flies. I had initially said I was going to get this revamped and sorted out by June 1.
Well. We see that didn’t work out. How is it already middle of August? This summer has flown! Kids are going back to school, it’s getting darker earlier, I’m making plans for September & October. How?? On one hand I feel like I haven’t done enough this summer, but then on the other I feel like I’ve been going 10,000 miles an hour. I’ve dipped my toes in the ocean in a few different spots, I’ve had tons of laughs and good times, watched a dear friend get married, I’ve had way too many drinks, I’ve had some excellent meals, I’ve got some great plans on the calendar for fall, and I’ve taken time for myself. All in all, this summer has been great, and in many ways, just what I needed.
Anyway, here I am. Why did I stop blogging? I wasn’t loving it, it’s that simple.
So I thought about it one day while I was in the kitchen. I realized being in the kitchen cooking something brings me a lot of joy. I love creating recipes, or following a recipe, figuring out a great dressing combo or mixing up the perfect sauce. Frying chicken or tofu, roasting veggies and chopping up things for a salad. It was then I decided, ok, go back to the blog, but let’s give it some more focus, and less pressure. More food, less trying to figure out WTF to post today. Less posts, more quality when posting.

Tarragon Chicken Salad
I am obsessed with Nugget Market’s Tarragon Chicken Salad. I LOVE tarragon. There’s just something about the flavor that gets me. Every once in a great while, I treat myself to a little container of this salad. If I am REALLY treating myself, I will eat it with a bag of salt & vinegar Kettle Chips. The other day I had a craving for tarragon chicken salad and I thought, why don’t I make it myself?
So I did just that. I will detail below what I did, but I will tell you right now, that next time, I would boil the chicken instead of pan cooking it, as it got a little crusty (which normally, I LOVE, but for chicken salad, it’s better to just have soft chunks of chicken).
Ingredients for Salad:
- 1 lb chicken tenders
- 3 stalks thinly sliced celery
- Handful of chopped walnuts
- 3 or 4 sprigs of fresh tarragon, leaves only (the stalks are kind of hard – this was a surprise to me – that’s what she said)
- 3 TBSP Mayo (I love Primal Kitchen Avocado Oil Mayo – literally eat it with a spoon)
- 1 TBSP Mustard (Obsessed with Trader Joe’s Dijon Mustard)
- 1 tsp Garlic (about one whole clove if you are using fresh, I’m lazy)
- Salt to taste (I like Real Salt)
- Pepper to taste
- Cook chicken. Like I said above, next time I would boil it. This time, I cooked it in some coconut oil on the stove top.
- Chop the celery, tarragon & walnuts
- Add all together to a bowl
Make dressing – literally just put it in a bowl and stir it up. Taste it. Does it need more of something? Add it, stir it, taste it again. Repeat if necessary.
Lastly, mix the dressing into the chicken bowl. Taste. Eat. Enjoy. I ate mine in lettuce cups, but I’d have much preferred it on its own or with some salt & vinegar chips. I was trying to be good and eat more veggies that night.
